Raspberry Rose Jam Squares with Oatmeal
Preparation and Cooking Time: 45 mins
Makes 18 pieces
10 Tbsp butter at room temperature, cut into 1/2 “ pieces
2 ¼ cups all purpose flour
½ cup sugar
1 Tbsp baking powder
1 egg
1 6 oz jar Quince & Apple Raspberry Rose Preserves
For the Topping:
¾ cup rolled oats
½ cup sugar
½ tsp vanilla
3 Tbsp butter, melted
Preheat oven to 350 degrees and grease a 9 x 13 pan
To make the dough, combine the flour, sugar, and baking powder in a bowl. Add in the butter, working it in with your hands until the mixture is crumbly. Add in the egg and mix until fully combined and you have a slightly crumbly, but cohesive dough. Press the dough into an even layer in your prepared pan, then spread the preserves evenly over the top.
For the topping, mix together the rolled oats and sugar, then pour in the melted butter and vanilla. Mix until everything is combined, then sprinkle the topping evenly over the jam layer.
Bake at 350 until jam is bubbling and the topping is beginning to brown, about 20 minutes. Let cool before slicing into squares and serving.
